Christmas Cookie Decorating Frosting

Each year as the calendar pages flit and flutter into December, I have a wish, a Christmas wish you might say. I yearn for my family to gather and decorate cookies together. A simple wish but one that brings memories, giggles, laughter and sweet thoughts long after the day is done. Guess what? This year my wish came true!

We gathered at our home on a frigid cold Sunday afternoon and the fun began. The youngest is two and he jumped right in along with his brother to make pretzel candy cane cookies. Who knew that a two year old could unwrap candy kisses? Fine motor skill development at its best. The other kids saved the day with their creative, can do spirit. The moms had fun decorating too!  All in all it was a win/win experience for everyone!

We slathered the sugar cookies and gingerbread men with sweet frosting. We dipped Oreos® into white almond bark and sprinkled them with glistening red sugar and sprinkles galore. We made peanut butter blossoms, pretzel kiss cookies and each child left with a sleigh made out of candies taped together. In between the fun, we snacked on pizza bites and sipped on sodas. Special treats that are saved for very special days. In my book, it was a magical day and one I shall cherish always.

One trick that made the day run smoothly was the decorator frosting that I made for the cookies. After years of trying decorator frosting after decorator frosting, I think I have reached decorator frosting nirvana. The trick? Adding meringue powder to stabilize the frosting once it is piped makes for decorator’s ease.

It’s not too late to make a batch of cookies and frost to your hearts content with those you love.

Eggnog Pumpkin Pie

My mom is a master pie baker. She can toss together a piecrust in no time and add the most scrumptious fillings that easily are blue ribbon winners at the fair. She taught me early on not to mess with tradition. Her tradition on pumpkin pie is that it is pretty dang hard to beat the recipe on the Libby’s® 100% pumpkin can. You know your mother is always right and she didn’t miss the mark on this advice that she passed on to me. Each year around this time, that is the recipe that I faithfully followed and the results were 5 star.

Fast forward a few years and I had the privilege of traveling with the Southern Living Magazine Cooking school throughout the south.What a great gig that was and I could write a book on the many adventures that we enjoyed while traveling and cooking our way through the South. Creamy Chicken and Wild Rice Soup

Mom's Favorite Kabobs

The calendar page swished over to September and zap! Warp speed running as we try to get back into the groove of a regular schedule. We have a looming cookbook deadline at the end of the month and that means craziness at our house with a capital C! (More on the new cookbook when we can share the news, but we couldn’t be more excited or have more fun working on the recipes!)

Deadlines, doctor’s appointments, bible study, quilt quild, card games with girlfriends, cookbook club, catching up with family and the list goes on and on. It’s all good, no let me rephrase, it’s all great! I’m feel so blessed beyond measure but the busyness means that dinner has to be a no brainer. [Read more…]

Grilled Southwest Salmon Salad

Salmon Salad
Don’t fall for it, not even for a one second. While school may be back in session and the stores are beginning to show the Halloween decor, you and I both know that it is still summer. The temperatures are soaring and the humidity is rising—all the more reason to continue the grilling season for months to come.

Salmon used to be the only fish that I enjoyed on a regular basis, especially at restaurants and parties. Apparently I enjoyed salmon a little too much, because these days I NEVER order it and rarely does it pass between my lips. There is hope and new found love for salmon with this recipe. [Read more…]
