The weather made a sharp turn this week and even broke temperature records for Kansas City. I do mean drastic changes–yesterday was 83 degrees and summer like. Today is a bit cooler, but yes, spring is around the corner.
With the change in the weather comes a change in what sounds great for breakfast. Wave bye bye to warm oatmeal ladled with pecans and dried fruit and open your arms wide for a welcoming hello hug to colorful fresh fruit, honey infused yogurt and granola. Tis time my friends, no need to go to the corner coffee shop and order a parfait. These are easy peasy to make at home.
There isn’t really a true recipe for granola parfaits but here is a template. Layer your favorite fresh fruits, nuts and yogurt in a clear glass dish. Clear glass is important. When you see the rainbow of freshness and crisp colors, breakfast tastes better already. Now layer some greek yogurt (go ahead and splurge by drizzling a bit of local honey into the yogurt). No magic wand needed but prepare to feel magical as you enjoy the coming of warmer, sunny days ahead.
Open up the windows, let the fresh air in and enjoy the world around you.
Favorite Cherry Almond Granola
Makes about 3 cups
2 cups old fashioned oats
1/4 cup wheat germ
1/4 teaspoon salt
1/3 cup sliced almonds
1/4 cup honey or maple syrup
3 tablespoons canola oil
3 tablespoons water
1/2 teaspoon pure almond extract
1/3 cup chopped dried cherries
Preheat oven to 275°F. Line a baking sheet with foil and spray with nonstick spray.
Place oats, wheat germ, salt and almonds into a large mixing bowl; stir to combine.
In a small saucepan, combine honey, oil, water and almond extract. Bring to a boil over medium heat; reduce heat and simmer for a few minutes. Drizzle over oat mixture. Stir to combine well. Pour in a single layer onto prepared baking sheet. Bake for 30 minutes; stir in cherries. Continue to bake until golden brown, about 20 to 25 minutes. Let cool.
Store in an airtight container for up to a month or freeze up to three months.
This weather has been wonderful! I am loving it. Funny timing on this recipe. At my son’s school they have taste test day where a nutritionist brings in foods for all the kids to try. Yesterday was fruit day and last night he was telling me that he tried dried cherries and he really liked them and wanted me to get some. So now I know what I am going to do with them!
