This is the beginning of birthday and holiday season in our family. On Saturday night, we celebrated my mother’s birthday and our daughter’s upcoming birthday. What a blessing that the entire family spent the evening together sharing a meal and catching up. No birthday party in our family would be complete without our traditional birthday cake.
This recipe was given to me about 30 years ago from Kathy. I have made it hundreds of times over the years and it never fails. I cherish this recipe because it is moist and very easy to put together.
A few tips about my chocolate cake routine. I wish I could report that this makes great cupcakes too, but not true. It really bakes best as a layer cake. I frosted this one with chocolate frosting and made a marshmallow cream frosting for the center. Of course, you can start your own tradition and frost the cake with your family’s favorite.
When we “officially” celebrate our daughter’s 14th birthday later in the week she has requested her favorite which is Ice Cream Cake. More on that later.

Best Ever Chocolate
1 3/4 cups all-purpose flour
2 cups sugar
3/4 cup cocoa
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1 teaspoon salt
2 eggs
1 cup milk*
1/2 cup vegetable oil
2 teaspoons vanilla
1 cup boiling water
Preheat oven to 350ºF. Grease and flour two 9-inch round cake pans; set aside.
Combine flour, sugar, cocoa, baking soda, baking powder and salt in a large mixing bowl. Add eggs, milk, vegetable oil and vanilla. Using an electric mixer on low speed, combine all ingredients until smooth. Continue beating for 2 minutes on medium speed. Gently stir in boiling water.
Divide batter evenly between pans. Bake for 26 to 28 minutes or until a pick inserted in the center comes out clean. Allow to cool for 10 minutes of a wire rack and remove from pans. Cool completely before frosting with your favorite frosting.
*I use 1/2 cup milk and 1/2 cup buttermilk

Thanks so much for reading our blog! I make a traditional buttercream frosting with butter, powdered sugar and milk. But I add about 1/2 cup marshmallow cream. My mom makes hers by just filling the cake with marshmallow cream straight from the jar and it is great too! Please let me know if you make the cake, I would love to hear if you like it.
