Easter is upon us and if you haven’t already started to think about your menu, it is time! Eggs signal spring and of course Easter. Our Easter table will not be complete without Deviled Eggs. Now that I think about it, what an ironic title for a recipe that is served to celebrate all things not related to the devil himself but related to the Resurrection. Hmmmm. Ok, I paused and did a little research. Deviled eggs were first referenced in the 18th century when the term “deviled” referred to spicy, specifically foods that used mustard or pepper. Folks in the Midwest or the southern part of the U.S. may refuse to call these tidbits of flavor deviled, opting instead for stuffed eggs or salad eggs. Some even go so far as to title these filled egg cups “angel eggs”. No matter, they are pure deliciousness and my family expects these golden goodies to adorn our Easter table. [Read more…]
Chicken Pot Pie
Spring is teasing us with warm days and hints of color but don’t be fooled, winter is still here. While the days are still cold and snow can still fly, why not prepare that down home comfort food wintertime favorite? Chicken Pot Pie — this recipe is one that should be prepared and enjoyed at least once each winter.
I had to tweak the basics to please my family. What does that mean? Well for starters, eliminate the traditional green peas. Our daughter has declared a moratorium on green peas….go figure. I replaced them with frozen corn. [Read more…]
Mushroom-Bacon Quiche Recipe
Oh, the comforting, delicious flavor of quiche. I love them—and to me, they never go in or out of fashion. What’s not to love–cheese, eggs and your favorite fillings.
But, first, let me share with you a story about my friend. She has been my friend for over 30 years—and we love talking about food—but also sharing stories about our husbands, kids, and anything life throws our way. You already know Roxanne as the other half of The Electrified Cooks, but I am blessed by her friendship in so many ways, each and every day. For my birthday she took me to lunch at Andre’s, where we enjoyed Quiche Lorriane. I loved lunch, the time with Roxanne and the quiche—and the next day I was craving quiche again. [Read more…]
Sausage Balls
Some days I can’t see the forest for the trees! Have you been there? Please tell me I am not alone. The upside is what fun it is when you finally see the trees, the forest and your mind sings Ah Hah!
Recently a dear friend asked me to proof her cookbook that she was getting ready to publish. It is a cookbook filled with her cherished family recipes. I have never met a recipe book that I didn’t want to see, so of course I was ready to read recipes. When I got to the recipe for Sausage Balls, I paused and then I paused again. Wait a minute! What? The recipe said to mix these in a stand mixer. Really? I always made mine like I would a meatloaf by placing my hands in food safe plastic gloves and mixing with my fingers. There it was ……that light bulb moment. [Read more…]
Orange Honey Fruit Parfaits
Getting together with friends doesn’t have to be stressful. Do you have those friends that you can never find a time that works for lunch or dinner? No worries! Spread your wings and shake it up a bit. Almost everyone is free for breakfast or brunch on the weekend. Breakfast is easy to prepare, tasty and a wonderful way to enjoy these weekends that are starting to be filled with sunshine.
One of my favorite brunch menus is so easy peasy that it is almost embarrassing. Make Orange Honey Fruit Parfaits, Cappuccino Chocolate Chip Mini Muffins and baked, crisp peppered bacon. The muffins can be prepared the day before and warmed in the oven just before serving. The parfaits go together lickety split and can be made an hour or so before your friends arrive. You will definitely want to bake the bacon so there is no messy stovetop to clean up and the bacon will be perfect. The smell alone will welcome everyone into your home. [Read more…]
