Sometimes you feel like a nut, sometimes you don’t. Sound familiar? That is my relationship with peanut butter cookies. They don’t tumble from our cookie jar very many times a year, but when I crave peanut butter cookies, I must admit the appeal of chocolate and peanut butter seals the deal.
We have all enjoyed one version of these or another but this is my favorite, probably because they are made with butter. There are as many recipes and variations for this traditional cookie as their are candy kisses in a package. Some days just scream for comfort cookies, chocolate and milk. Enjoy!
Peanut Butter Kiss Cookies
½ cup sugar
½ cup dark brown sugar
½ cup unsalted butter, at room temperature
½ cup creamy peanut butter
1 large egg
1 teaspoon vanilla extract
1 ¾ cup all-purpose unbleached flour
1 teaspoon baking soda
1 teaspoon salt
Additional sugar for dipping cookies, about ⅓ cup
36 to 40 milk chocolate candy kisses, unwrapped
Heat oven to 375°F. Line cookie sheets with parchment paper.
In a mixing bowl, using an electric mixer on medium speed, combine sugar, brown sugar, butter and peanut butter until light and fluffy. This takes several minutes. Add egg and vanilla; beat until well mixed.
In a small bowl, whisk together flour, baking soda and salt. Add to creamed mixture, beating on low speed until well blended.
Shape dough into 1-inch balls. Roll in sugar and place about 2-inches apart on prepared cookie sheets. Bake 8 to 10 minutes, or until light golden brown, do not over bake. Immediately press 1 candy kiss in the center of each cookie. Remove to cooking rack.
Repeat with remaining cookie dough.
Makes about 36 to 40 cookies
Tips:
If dough is too soft, refrigerate for an hour or two before shaping.
I like to bake one pan at a time.
