Tailgating. Eating outside before the game on a picturesque fall day is packed with fun. The air snaps with a cool breeze, but laughter and cheers chase the chill away. Grills fire up and smoke encircles everyone, friends and fans of the opposing team alike. Joyous expectations for great food and a winning score fill the air.

In Kansas City, this means the World Series is the universal favorite. The Chiefs rally at Arrowhead, and college ball is everywhere. I love it, and truth be told, while I am a sports fan, I am a bigger fan of the tailgate. [Read more…]

Microwave Caramel Corn

What a magnificent fall season we are enjoying in the Midwest. It seems necessary to pinch myself over and over again to ensure that I am not living in San Diego. Beautiful orange infused sunrises combined with pink and purple sunsets, cool mornings, warm days and then cool evenings…..life is good!

It seems we are spending more and more time outside in front of the outdoor fireplace. Peace and beauty abound and we enjoy the silence and then again the moments filled with lively conversation. The crackle of the fire and the chill in the air beckon for a delicacy that we enjoy only during this time of year. I am not sure why we don’t indulge in this treat year round…oh yea….Doctor’s orders. The treat I am referring to is caramel corn. [Read more…]

Biscuits and Gravy

Food and the memories it conjures up is priceless, isn’t it? Growing up I was blessed with a mother who loved to cook and she is a fabulous cook. We spent many a weekend at the Lake of the Ozarks at our lake home. It was a precious time filled with happy moments. Cooking and tradition run strong but seemed to be etched forever in those lake meals. Every Sunday morning we enjoyed Biscuits and Sausage Gravy. How awesome is that?
It was my dad’s favorite. He would rise early, go fishing by himself and know that when he returned my mom would have biscuits and gravy along side a hot, steaming cup of coffee waiting for him. It was perhaps one of my favorite times of the week.

While my dad recently passed away and our family is in the midst of deep grief, it is comforting to know that I can return to all those warm, wonderful memories with the stir of a spoon in the thickened gravy. That gravy will become a glorious crown for the warm country biscuits. Enough said. [Read more…]

All of us turn to boneless, skinless chicken breasts for everyday family meals. Quick cooking and lean, they are great served in so many different dishes. Yet, cooking them in a slow cooker is a little tricky for they overcook too quickly and end up tasting dry or tough. [Read more…]
