Avocado Sandwich

Posted by Roxanne on October 15, 2013

avocado sandwich

Kathy and I continue to pinch ourselves when we think about our whirlwind trip to London. It was spur of the moment and as we already described, we had an incredible time.

We were walking and exploring Notting Hill with our hosts and they suggested we grab lunch at Jamie Oliver’s Recipease Cafe. Well, ok, you don’t really “grab” anything in Europe, but we did stop in and explore this remarkable cooking shop paradise and enjoyed lunch, too. It was one of those lunches that will stay forever in my mind’s scrapbook of food experiences.

I had an avocado sandwich with the following description:
Smashed spicy avocado £6.95V
Avocado, Worcestershire sauce, toasted London bloomer bread & cherry tomatoes.
 Add outdoor-reared streaky bacon £7.95

It was the perfect antidote to calm my nerves from travels, presentations and new adventures.

As I have blogged about before, lunch is always a challenge. I decided it was time to recreate that tasty avocado sandwich and since I have discovered the perfect old world bread, it was a snap. No more lunchtime blues.

Avocado Sandwich

2 ripe avocados, peeled with seed removed
Worcestershire sauce, to taste
Dash of red pepper flakes
Cherry tomatoes
1 or 2 slices bacon, cooked until crisp, optional
2 slices old world bread, toasted

In a small bowl, mash avocados with Worcestershire sauce. Add red pepper flakes.

Spread onto toasted bread fairly thick. Top with sliced cherry tomatoes or crisp bacon.

Beauty of the Bistro
Lunch! Just the mention conjures up all kinds of emotions. Always on the look out for new lunch solutions, I was thrilled when I found the Beauty of the Bistro food truck and discovered a solution to most of my Wednesday lunches. Its the perfect anecdote for hump day. Read all about this perfect lunch spot at the blog I wrote for the Kansas City Star’s Kansas City Chow Town site here.

Ok, that solves the Wednesday dilemma but what about the other 6 days? I am oh-so-lucky that my spouse joins me many weekdays for lunch and my daughter attends a university model high school, so she is home for lunch 2 weekdays. [Read more…]

Custard Eggplant Gratin

Eggplant Gratin

It happens every year around this time. It seems I have just gotten my groove on when it comes to visiting local farmer’s markets and enjoying the bountiful produce. When I have finally gotten my routine down to an art, the calendar days slip away and I soon realize my farmer’s market days are numbered.  And, I do the exact same thing every year. I go to the market, per my routine, but all of a sudden, as I feel the hands of time ticking away, I begin to purchase gargantuan amounts of produce. [Read more…]

Old World Bread

Old World Bread

I would be the first to admit that if I had my druthers we would pack up and move to Paris, France in a heartbeat! I know, I know when reality sets in, as it always does, you and I both know that this will probably never happen, but, hey, a girl can dream can’t she? One of the things I adore about Paris is the boulangerie…ah, the bread is so hard to describe, but once you’ve tasted it, each and every fiber in your body and soul remembers that experience.

Imagine my delight when I found a little piece of Paris in Kansas. For details about the bread that can carry you to the city of love, check out my blog on the Kansas City Chow Town. [Read more…]

Mississippi Mud Cake

It rolled around like perfectly timed clockwork. Yep, it is that time again and our home is filled with a plethora of emotions, some good and some not so good. You know what happens each year at this time—back to school. There is just no getting around it, ready or not.

We begin trying to get everything that was on our summer bucket list marked on our calendars. Then, suddenly the weeks before the school bell chimes become just as busy and crazy as the weeks leading up to Christmas. It has been a wonderful summer, filled with so many blessings and memories. What recipe would celebrate Back to School at our dinner table this week? [Read more…]
