Biscuits and Gravy

Food and the memories it conjures up is priceless, isn’t it? Growing up I was blessed with a mother who loved to cook and she is a fabulous cook. We spent many a weekend at the Lake of the Ozarks at our lake home. It was a precious time filled with happy moments. Cooking and tradition run strong but seemed to be etched forever in those lake meals. Every Sunday morning we enjoyed Biscuits and Sausage Gravy. How awesome is that?
It was my dad’s favorite. He would rise early, go fishing by himself and know that when he returned my mom would have biscuits and gravy along side a hot, steaming cup of coffee waiting for him. It was perhaps one of my favorite times of the week.

While my dad recently passed away and our family is in the midst of deep grief, it is comforting to know that I can return to all those warm, wonderful memories with the stir of a spoon in the thickened gravy. That gravy will become a glorious crown for the warm country biscuits. Enough said. [Read more…]

There are still plenty of days left before the ice and snow hit hard to enjoy the thrill of the grill. Midwesterners grill pork steak and that is something that other parts of the country typically do not enjoy. It is time to join the bandwagon. Pork steak is inexpensive, no, let me say cheap! Italian Sausage Soup

Italian Sausage Soup
Finally cold air swooshed in and all is well in my world. A dip in the temperature indicating Fall is almost here, taking our yearly trek to Dunn’s for apple donuts and yes, the arrival of soup on our family menu.

The cool temps are perfect for soup. I was pleasantly surprised when our daughter announced at the dinner table that she was equally excited to be savoring soup. “Yes!”, she exclaimed, “I love all the wonderful soups we enjoy when the temperature is cooler.”

Made my day!

I’ve been eying the container of greens marked “super” at my grocery store for months. [Read more…]

Slow Cooker Chicken and Pasta

Everyone knows that life has its ups and downs, so does the answer to what’s for dinner tonight. The heat is stifling at best and the humidity is off the charts. I just couldn’t bare the thought of my dear husband grilling one more day in the intense heat. He was a trooper all weekend and grilled, grilled and grilled some more but come Monday I had to say no more. Desperate times call for desperate measures. A variety of pulls on my time meant only one thing–dig out the slow cooker and put it to good use.

Spicy Cucumber Salad

Spicy Cucumber Salad

I grew up falling in love with my mom’s cucumbers and vinegar. It was a tangy addition to many a summertime meal at my childhood home. After I married my husband, I discovered his family’s version of cucumbers and they were delicious too. He grew up with more of a sugar syrup-vinegar version while I grew up with onions and vinegar but no sugar. Either method is a winner in my book. After noshing on these crisp slices all summer long, it was time for a change.

I adapted a recipe that I had developed for the Kansas City Star’s Eating for Life column. I left out the red pepper flakes, added srircha sauce and increased the amount of pasta like pearls in order to please our teenager….voila! Perfect for summer lunches or to accompany burgers from the grill. This version may not be as healthy as the original recipe, but it works and my family will devour it without complaints and still reap the benefits of eating fresh vegetables. This works for me!
