Recipes flood my internet feed daily and one or two usually catch my eye and I mentally file those away and plan to test, research and explore further. Then there are those recipes that fly by in a blip and I think “ewww ick”, bloggers are becoming more and more desperate with each passing hour by the “recipes” they are blogging about. One such recipe that hit the ewww ick radar was baked potato dip. Many versions were floating around the world wide web and I thought to myself, why?
Fast forward to a soggy Memorial Day weekend where plans were diverted to accommodate the never ending inches of rain. Kathy’s tradition (and a fun one I might add!), has always been to gather on the hill of the Liberty Memorial. Friends and family tote lawn chairs, libations and plenty of good eats to the hill in order to hear the Kansas City Symphony and enjoy a spectacular fireworks display. This year called for Plan B. Kathy’s friends and family could feel her pain as she threw in the towel and said no to the soggy event. Instead she rallied like a trooper, swung open the doors of her home and we gathered for a night of fun, laughter, libations and games. The food was overflowing and guess what appeared on the buffet? Baked Potato Dip! Remember I filed that in my ewww ick file and there it was, and you probably know where this is going. It was delicious! Everyone groveled for the recipe and it was a satisfying salve to the rainy day.
Instantly, I developed a version that we enjoyed as we grilled ribs on the barbie for the holiday. Now I am thinking that ewww ick file may need to be revisited for other gems that rise to the surface.
Back to the wonderful gathering at Kathy’s house—all the lights were turned off and we celebrated music and fireworks together—kind of like being at a drive-in movie. There is a life lesson in all this. Plan B’s can be just as rewarding as Plan A but the key is to open yourself up to change.
Here is my version of the infamous dip:
Baked Potato Dip
Makes about 2 cups
1 cup sour cream
4 ounces whipped cream cheese (in the tub)
2 cups shredded Cheddar Cheese
8 slices thick cut bacon, cooked and crumbled
1/4 cup fresh chives
1 teaspoon Worcestershire sauce
1/2 teaspoon hot seasoning sauce
Additional shredded Cheddar cheese and chives for garnish
Combine sour cream, cream cheese, Cheddar cheese, bacon, chives, Worcestershire sauce and hot sauce; blend well.
Place in serving bowl and garnish with shredded Cheddar cheese and chives.
Serve with potato chips, veggies or toasted baguettes.
