Amaretto Fruit

Amaretto Fruit

Traditions! Yes, traditions run deep in our home this time of year. Our family treasures all of our traditions (and yes, some are quirky,) Christmas brings as many traditions to our home as wishes on Santa’s list.

It was a joy to share our Christmas morning tradition this week on the Kansas City Chow Town blog. You will find our tradition of southern style monkey bread. Each Christmas morn for as long as I can remember, we have started this holy day with a breakfast that can be prepared ahead. Amaretto infused citrus, cheese and sausage laden casserole and of course, monkey bread.

A friend shared this Amaretto fruit recipe with me years ago. She is quite a gourmet cook. I thought her comment about this recipe were spot on. She said, “this recipe is so very simple and elegant at the same time.” I added maraschino cherries to entice our daughter to try this recipe and it seemed to work.

For many years, I worked for the Florida Department of Citrus and had the pleasure of traveling North America and promoting citrus from Florida. One of the first things I learned was a quick and easy way to section citrus. Try this method and you can save time.

Amaretto Fruit

2 grapefruit, peeled and sectioned
2 oranges, peeled and sectioned
1/4 cup water
2 tablespoons sugar
1/4 cup amaretto
4 (1-inch) pieces of cinnamon sticks
6 to 8 maraschino cherries

Place the citrus in a bowl. Combine water and sugar in a 1 cup glass measure. Microwave on High power for 1-1/2 minutes. Stir to dissolve sugar. Allow mixture to cool. Pour over fruit along with amaretto. Add cinnamon sticks and cherries. Stir gently. Cover and refrigerate overnight, allowing flavors to blend.
