Spring Greens
We are so excited to be participating as bloggers with The Kansas City Star on their Chow Town Blog. Our first entry was lots of fun and for those of you who have attended our cooking classes, you are familiar with our salad making technique.
Start shopping for your favorite pillowcase. Buy a pillowcase in a fun color, or one that matches your kitchen, or at least in a print that sets it apart from those other pillowcases in your linen closet. It will be easier to keep it separate. Then visit the Chow Town Blog and see what on earth that has to do with salads and spring greens.
You can read about the first trip to the farmers market here. Plan to use the fresh greens within a few days and certainly no later than a week after purchasing. To help keep them fresh, wash the greens, layer with paper towels, then seal tightly in a plastic food bag. [Read more…]
Grilled Chicken Bruschetta Salad
Is it a salad or an open-faced sandwich? No matter what you call it, Grilled Chicken Bruschetta is a tasty, easy dish—and we love it.
The Midwest has been through a terrible drought—so bad that gardens withered and the produce shriveled. Yet, some—like tomatoes and peaches– seem sweeter or at least, more precious. That juicy summer flavor shines in this dish!
It is one of those dishes that tastes so fresh and yet is easy, so it is perfect to serve on a busy evening. It is also ideal to serve on an evening when you feel you can catch your breath, pour a glass of wine and just enjoy. I am grateful for evenings like that! Winter Salad
We are still trying to stay focused on increasing the amount of vegetables in our family meals. Winter is the perfect time to add soup and salad to the menu. While the weather doesn’t make me yearn for the grilled salads of summer, I still turn to leafy greens as often as possible. This Winter Salad has been a favorite for years. The ingredients provide a heartier profile that suits these winter days perfectly.
I served this hearty salad with a bowl of Cheesy Vegetable soup over the weekend and everyone clamored for more. It’s a great recipe to warm your soul during these gloomier winter months. I would love to know if you give this salad a try.
Winter Salad
6 cups salad greens, such as spring mix with arugula
2 slices bacon, cooked crisp and crumbled
3 tablespoons toasted, coarsely chopped walnuts
3 tablespoons dried sweetened cranberries
1/4 cup crumbled goat cheese
Dressing
3 tablespoons extra virgin olive oil
1 tablespoon honey
1 tablespoon coarse grain mustard
2 tablespoons freshly squeezed lemon juice
1 clove garlic, minced
In a large salad bowl, toss all the salad ingredients.
In a small bowl, whisk together the dressing ingredients. Drizzle desired amount of dressing and toss gently.
