Summertime and the living is easy, don’t you agree? Our meals during summer look very different than during the other seasons when we are crazy busy. Summer means later dinners or even appetizers with a cold drink or glass of wine, and that becomes dinner many a day. This is what makes summer fun.
I like easy together appetizers paired with cheese, olives, veggies and such. This salmon spread goes together in minutes and is a huge hit at our home. Of course this works great with smoked salmon but I like it with leftover salmon from the grill. It seems like I never gauge the amount of salmon to serve for dinner and there are always leftovers. This is the perfect answer for leftovers. We enjoy this packed on ice in our picnic basket too!
Salmon Spread
8 ounces cream cheese, at room temperature
½ cup sour cream
1 tablespoon fresh squeezed lemon juice
2 tablespoons fresh dill
3 tablespoons fresh chives
4 to 6 ounces cooked salmon
Salt and pepper to taste
Crackers, baguettes and vegetables
Place cream cheese, sour cream, lemon juice, dill, chives, salmon, salt and pepper in work bowl of food processor. Pulse to blend completely. Place mixture in a bowl and refrigerate for several hours or overnight. Serve with crackers, baguettes or vegetables for dipping.
