Certain foods just make more sense to make at home. Guacamole falls into this category. The ingredients go together in minutes and the taste is much fresher and doesn’t have that preservative-off flavor. There are many guacamole afficianodos who claim their recipe is the best and there are as many versions of this recipe as there are tortilla chips in the bag.This is our favorite go to version. Summertime is the time to mix up batch after batch and enjoy on the patio or at a picnic. Pair with an icy drink and you will be on vacation even if it is in your own backyard.
Guacamole
3 to 4 ripe avocados
3 tablespoons fresh squeezed lime juice
½ small red onion, finely chopped
1 small tomato or 5 grape tomatoes, seeded and chopped
2 tablespoons finely minced fresh cilantro
1 garlic clove, minced
4 drops hot seasoning sauce
1 teaspoon salt
½ teaspoon coarsely ground pepper
Cut the avocados in half and remove pits. Scoop avocado out of shell into medium mixing bowl. Use a fork and smash, leaving some larger pieces. Add lime juice, onion, tomato, cilantro, garlic, hot seasoning sauce, salt and pepper. Gently stir all ingredients together. Taste and adjust salt, pepper and hot seasoning sauce if necessary.
Makes about 2 ½ to 3 cups
