Potato salad–do those words bring a smile and cause you to pause and fondly remember days gone by? Do you recall family reunions, picnics, BBQ’s, vacations on the beach or at the lake and a plethora of happy times? Or do you shutter, shake your head and think, oh no! Not potato salad. Who makes potato salad anyway?
Potato salad falls into the same category as meatloaf, chocolate chip cookies and spaghetti sauce. Every home has their own version and that family recipe is truly the only correct way to prepare that traditional food. Potato salad is no different. My Mom’s is the best in my book. Different in that my dad adored mustard, especially in his potato salad, thus our family recipe is mustard yellow in color and if you like French’s you will want to try our family recipe.

Summertime Potato Salad
3/4 cup mayonnaise
2 to 3 tablespoons yellow mustard
2 tablespoons cider vinegar
1/2 teaspoon salt
1/4 teaspoon coarse ground pepper
4 cups cooked, peeled and cubed red potatoes, (about 5 to 6 medium)
1 cup sliced celery
1/2 cup finely chopped yellow onion
2 to 3 hard cooked eggs, chopped coarse
In a small bowl, whisk together mayonnaise, mustard, vinegar, salt and pepper. Set aside.
In a large mixing bowl gently toss together the potatoes, celery, onion and hard cooked egg. Pour mayonnaise mixture over all and stir gently to blend well.
Refrigerate several hours before serving.
Makes about 5 1/2 cups
