What a magnificent fall season we are enjoying in the Midwest. It seems necessary to pinch myself over and over again to ensure that I am not living in San Diego. Beautiful orange infused sunrises combined with pink and purple sunsets, cool mornings, warm days and then cool evenings…..life is good!
It seems we are spending more and more time outside in front of the outdoor fireplace. Peace and beauty abound and we enjoy the silence and then again the moments filled with lively conversation. The crackle of the fire and the chill in the air beckon for a delicacy that we enjoy only during this time of year. I am not sure why we don’t indulge in this treat year round…oh yea….Doctor’s orders. The treat I am referring to is caramel corn.
This microwave version goes together in minutes and can easily be enjoyed by family or shared as a wonderful gift. Now it is even more of a cinch as I use Skinny Pop popcorn. Have you tried this brand? Great on its own but even better made into caramel corn.

Microwave Caramel Corn
Makes 4 quarts caramel corn
1 cup dark brown sugar
1/2 cup butter
1/4 cup white corn syrup
1/2 teaspoon salt
1/2 teaspoon baking soda
16 cups popped popcorn
Combine brown sugar, butter, corn syrup and salt in a 4 to 6 cup microwave safe bowl or measure. Microwave on high power until mixture comes to a full boil. Continue to microwave on high power for 2 minutes.
Stir in baking soda and blend well.
Place popcorn in a brown grocery bag. Drizzle brown sugar syrup over all and stir to coat evenly. Roll up bag and microwave on High power for 45 seconds. Remove and stir popcorn mixture. Return to microwave and microwave on High power for 45 seconds. Spread caramel corn onto two baking sheets to cool.
Store in an airtight container.
