There are still plenty of days left before the ice and snow hit hard to enjoy the thrill of the grill. Midwesterners grill pork steak and that is something that other parts of the country typically do not enjoy. It is time to join the bandwagon. Pork steak is inexpensive, no, let me say cheap! Remember the holidays are just around the corner so the time to start counting pennies is now. Why not enjoy enjoy a scrumptious meal and tuck the extra $ away for the months ahead?

If you have ever tried pork steak, then you know when it is good, it is very good and when it is bad….well enough said. We have discovered a sure fire why to ensure tender, succulent pork steak each and every time. The secret is in the slower process and it makes all the difference.
BBQ Pork Steak
Makes 4 servings
Rub:
2 to 3 pork steak slices, about 1/2-inch thick
2 teaspoons paprika
1 tablespoon dry mustard
2 teaspoons coarse ground black pepper
1 teaspoon garlic powder
1-1/2 teaspoons ground cumin
1 teaspoon salt
1/4 teaspoon cayenne pepper
Barbecue Sauce
1 can (12 oz.) beer
1-1/4 cups ketchup
1/4 cup steak sauce
1/4 cup brown sugar
3 tablespoons cider vinegar
2 tablespoons Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon hot seasoning sauce
1-1/4 teaspoons liquid smoke
Pat steaks dry with a paper towel. In a small bowl, combine all of the rub ingredients. Rub the steaks evenly on all sides with the rub mixture. Place the meat on a large platter, cover with plastic wrap and refrigerate overnight.
When ready to grill, prepare the barbecue sauce. Combine all ingredients in a 13 x 9 inch disposable aluminum pan; whisk to combine well; set aside.
Using a gas grill, turn all burners on to high setting and let heat 10 to 15 minutes. Leave the main burner on but turn off the remaining burners. Sear steaks on grill, about 5 minutes per side.
Place pork steaks in the sauce in the aluminum pan. Cover the pan with aluminum foil. Place pan on grill, cover the grill and cook for 1 hour to 1 hour 15 minutes, or until the steaks are fork tender. Carefully remove the pan from the grill. Remove the meat from the sauce and place on the grate for about 4 to 6 minutes or until the steaks are lightly browned. Transfer to a serving platter and let stand for 10 minutes before serving. If desired serve additional sauce with steaks.
