Dinnertime seems to be on a constant racetrack. What’s for dinner? When? How long before dinner—or do we need to rush out after dinner? No time to sit and savor and no time to really talk to your family.
It is time to slow down and serve an appetizer and one of my favorites is this Whipped Honey Goat Cheese Spread.
Yes, my empty nest is calmer than when my daughters were young and we rushed to the after school activities, but sometimes, I still need to put the brakes on and make a point to stop and enjoy dinnertime.
Restaurants offer appetizers, so borrow that tip and serve an appetizer. I used to resist appetizers –for I wanted to limit the cost and calories, but now, I realize that slowly savoring an appetizer is a moment to enjoy. So gather at your own dinner table, take a minute to pour a drink—sure I love a glass of wine, but iced tea or water will work too, and just enjoy your family and the appetizer.
Best of all, this one is quick, easy and ready on the spur of the moment. Several more upscale restaurants in Kansas City offer a delectable whipped goat cheese and accompany it with warm, toasted bread. It is simple and yet elegant, and it is inviting for adults or kids, alike.
Here is my version of this easy appetizer. Stock the fridge so you can make the cheese spread soon—maybe this Friday evening or during the upcoming Labor Day weekend. Then, serve it often so you can slow dinnertime down and make it an enjoyable family-oriented time.
Whipped Honey Goat Cheese Spread
6 ounces goat cheese, softened
1-1/2 tablespoons milk
1 tablespoon unsalted butter, softened
1 teaspoon honey (or 1-1/2 teaspoons if a sweeter spread is desired)
1/2 teaspoon minced fresh thyme leaves
Salt and freshly ground black pepper, to taste
Toasted or grilled slices of bread
Place goat cheese, milk, butter, honey, thyme, salt and pepper in a mixing bowl. Beat with an electric mixer at medium speed about 1 minute or until the goat cheese is very creamy and light.
Serve as a spread on toasted or grilled slices of bread.
Makes about 1 cup.
Tips:
If you have leftover goat cheese spread, cover and refrigerate for up to 3 days. Allow to come to room temperature for serving.
Goat cheese is available in logs and as crumbled pieces. Look for a log for this recipe.
Crusty sour dough or a flavorful French or Italian bread is great with this spread. In a pinch, serve it with water crackers and you will still enjoy the appetizer.
