Pita bread is a favorite of mine — almost a blank canvas just waiting for luscious toppings. Yet pita bread that tastes like cardboard or one that cracks and rips when you try to fill the pocket is just not what I want.
Read the Kansas City Star Chow Town blog for my discovery—a local bakery that makes fantastic pita breads. Still warm from the oven, the pillow-soft breads are like no other pita breads. How did I find them? When I wanted fresh pita breads, I asked a local restaurant that served great pita breads if I could buy some from them, and from the label on the package, I was able to trace it to the baker. I have also asked restaurants where they get that fantastic bacon, if they made the fresh jam or who supplies a particular cheese. It is tip that you can use, anywhere—at home or when traveling– for people passionate about great food love to chat about it and will often share the name of their supplier or recommend an artisan or another local shop. Once you get that referral, the hunt is on! What a fun hunt it is and I love the food finds that I discover.
So now, with fresher-than-fresh pita breads in hand, I could pair them with summer foods. We filled pocket breads to take on a picnic to a local outdoor theater. I love grilling it and topping it like a pizza. Another favorite is to make a tartine, an open-faced sandwich, with fresh grilled vegetables, an herb flavored mayonnaise spread and a sprinkling of feta or goat cheese.
And sure, I love wedges spread with hummus. Easy! Inviting! Want a piece?
